  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • Dairy-free dark chocolate for drizzling
  • Oreo cookies for decoration

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, mix dairy-free milk and apple cider vinegar; let sit for 5 minutes.
  3. In another bowl, whisk together flour, cocoa powder, sugar, baking powder, and bicarbonate of soda.
  4. Add sunflower oil to the milk mixture; then gradually combine the wet and dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 20-25 minutes until a toothpick comes out clean.
  6. For the frosting, beat dairy-free butter until creamy, add icing sugar gradually, then mix in aquafaba.
  7. Once cooled, frost the cupcakes, drizzle with melted dark chocolate, and decorate with Oreos as bat wings.
