  • 2 tablespoons olive oil
  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) diced tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Season beef cubes with salt and pepper; add to pot and sear until browned on all sides. Remove and set aside.
  3. In the same pot, sauté onion until translucent; add garlic and cook briefly.
  4. Stir in carrots and celery; cook for about 5 minutes until softened.
  5. Add tomato paste and diced tomatoes; mix well.
  6. Return beef to the pot, then pour in apple vinegar and beef stock along with rosemary.
  7. Cover and reduce heat to low; simmer for at least two hours until the beef is tender.
