  4. Cover and let the dough rest for 1 hour.
  5. Perform stretch and folds every 30 minutes for a total of 3-4 sets.
  6. Allow the dough to bulk ferment until bubbly.
  7. Lightly flour your surface and shape the dough into a ball.
  8. Place in a floured banneton basket; cover and let proof for 30 minutes to an hour before refrigerating for up to 24 hours.
  9. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
  10. Score the dough on one side before baking.
