  • 6 strips thick-cut turkey bacon
  • 1 lb. medium pasta shells
  • 1/4 cup butter (or reserved drippings)
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 cup gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • Optional: 2 large yellow onions (for caramelizing)

Instructions

  1. Slice onions into even strips.
  2. In a medium skillet, heat butter and olive oil; add onions and caramelize for about 40-50 minutes.
  3. Cut turkey bacon into thirds; cook in a large skillet over low heat until crispy.
  4. Reserve drippings from Turkey Bacon; set Turkey Bacon aside.
  5. Boil salted water; cook pasta until al dente.
  6. In the skillet with reserved drippings, whisk in flour for 2 minutes.
  7. Gradually stir in heavy cream and milk; season with mustard powder, thyme, garlic powder, and hot sauce.
  8. Reduce heat; mix in cheeses until melted; combine with drained pasta and chopped Turkey Bacon
  9. Serve warm garnished with parsley if desired.
