  • 34 lbs arm roast (or chuck roast)
  • 1 tbsp olive oil (optional)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 cups low-sodium beef broth
  • 1 tbsp balsamic vinegar
  • 3 cups baby carrots
  • 2 lbs Yukon gold or russet potatoes (peeled & cubed)
  • 3 tbsp butter
  • ½ cup milk (or more as needed)

Instructions

  1. Prepare your ingredients by gathering everything you need.
  2. If desired, heat olive oil in a skillet. Season the roast with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika. Sear the roast on all sides until browned.
  3. Place the seared roast in a slow cooker or Dutch oven. Add minced garlic, sliced onion, beef broth, balsamic vinegar, and baby carrots.
  4. Cook on low for about 8 hours or high for approximately 4 hours until the meat is tender.
  5. Meanwhile, boil peeled and cubed potatoes until tender. Drain and mash with butter and milk; season to taste.
  6. Once cooked, slice the pot roast against the grain and serve with mashed potatoes.
