  • 1 cup mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup granulated sugar for cinnamon swirl
  • 1 tbsp ground cinnamon for cinnamon swirl
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1/2 tsp vanilla extract for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13-inch baking pan.
  2. In a large bowl, mix together mashed sweet potatoes, sugars, vegetable oil, eggs, buttermilk, and vanilla until smooth.
  3. In a separate bowl, sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed.
  5. Prepare the cinnamon swirl by mixing granulated sugar with ground cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan, sprinkle with half of the cinnamon mixture, add remaining batter on top, and swirl gently with a knife.
  7. Bake for 35-40 minutes until a toothpick comes out clean.
  8. Cool completely before drizzling with glaze made from powdered sugar, milk, and vanilla.
