  • Olive Oil Spray or Avocado Oil Spray
  • Salt
  • 3/4 Cup Cranberry Sauce
  • 1/4 Cup Pecans
  • 1/2 Cup Dairy-Free Brie

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the sweet potatoes into discs about 1/4 inch thick. Arrange them on a parchment-lined baking sheet, lightly mist with olive oil spray, and sprinkle with salt.
  2. Bake for 15 minutes, flip each disc, then bake for another 15 minutes until tender.
  3. Remove from the oven and top each disc with a dollop of cranberry sauce and a piece of dairy-free brie. Return to bake for an additional 10 minutes until heated through.
  4. Gently press a pecan into each piece of cheese and bake for another 5 minutes.
