  • 1.5 lbs (700g) beef chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1.5 tsp cayenne pepper, adjust to taste
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 0.5 tsp cinnamon
  • 1 (14 oz) can crushed tomatoes

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook for another minute.
  2. Stir in the ground spices: cumin, coriander, cayenne pepper, turmeric, garam masala, and cinnamon. Toast for about 2 minutes.
  3. Increase heat to medium-high and brown beef cubes in batches for about 5-7 minutes per batch.
  4. Add crushed tomatoes and bring to a simmer. Reduce heat to low, cover, and cook for at least one hour until beef is tender.
  5. Adjust seasoning with more cayenne if desired and serve hot with rice or naan.
