  • 2 pounds beef shoulder or beef butt, cut into chunks
  • 1 can (20 ounces) pineapple chunks, drained (juice reserved)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

Instructions

  1. In a mixing bowl, combine reserved pineapple juice, soy sauce, brown sugar, minced garlic and ginger, salt, and pepper. Mix well.
  2. Place beef chunks into the slow cooker and pour the mixture over them evenly.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  4. During the last hour of cooking, add drained pineapple chunks to infuse flavor.
  5. To thicken the sauce, mix cornstarch with water to form a slurry. Remove cooked beef and pineapple from the slow cooker; set aside.
  6. Pour remaining liquid into a saucepan and stir in cornstarch slurry until thickened.
  7. Return beef and pineapple back to the slow cooker and pour thickened sauce over everything.
  8. Garnish with chopped green onions before serving.
