  • 1 medium orange
  • 1/2 cup orange juice
  • 4 cloves garlic
  • 1 teaspoon smoked paprika
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons kosher salt
  • 1/2 cup orange marmalade
  • 1 pound Yukon Gold potatoes
  • 1 pound Brussels sprouts
  • 1/4 cup brown sugar
  • 2 tablespoons rosemary
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, zest and juice the orange, then combine with orange juice, minced garlic, smoked paprika, olive oil, salt, and chopped rosemary. Whisk until well mixed.
  3. Place the beef tenderloin in a baking dish and pour the marinade over it. Let it marinate for at least 30 minutes.
