  • ½ cup almond flour
  • ¼ cup coconut flour
  • 3 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • ½ cup cashew butter (or any nut/seed butter)
  • ½ cup coconut oil
  • ⅓ cup pumpkin purée
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • ¼ tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix almond flour, coconut flour, melted coconut oil, and maple syrup until combined. Scoop about a tablespoon into each liner and press flat.
  3. Bake the crusts for 10–12 minutes until golden at the edges. Let them cool completely.
  4. In another bowl, combine cashew butter, coconut oil, pumpkin purée, maple syrup, vanilla extract, pumpkin pie spice, and sea salt. Gently heat until smooth.
  5. Pour the pumpkin mixture over the cooled crusts and freeze for at least 2 hours until set.
