  • 2 lbs fettuccine (or pasta of choice)
  • 8 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 4 cups heavy cream
  • 2 cups pumpkin purée (not pie filling)
  • 2 cups freshly grated parmesan cheese
  • 1 tsp ground nutmeg
  • 1 tsp dried sage (or 2 tsp fresh, finely chopped)
  • Salt and pepper to taste
  • 1 cup crispy turkey strips or Turkey Bacon bits
  • ½ cup toasted walnuts or pecans
  • ½ tsp crushed red pepper
  • 4 tbsp chopped fresh parsley

Instructions

  1. Cook pasta in salted water until al dente; reserve 1 cup of pasta water, then drain.
  2. In a large skillet, melt butter over medium heat and sauté minced garlic for 1–2 minutes.
  3. Stir in heavy cream, pumpkin purée, nutmeg, sage, salt, and pepper; simmer for 5–7 minutes.
  4. Add parmesan cheese, stirring until melted; adjust thickness with reserved pasta water if needed.
  5. Toss cooked pasta in the sauce until fully coated; add crispy turkey strips or nuts if desired.
  6. Serve immediately garnished with chopped parsley.
