  • 23 tablespoons almond milk (as needed)
  • ¼ cup chopped walnuts or pecans
  • ¼ cup raisins (optional)
  • ¼ cup white chocolate chips, melted (or coconut butter drizzle) (optional)

Instructions

  1. Line an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, combine rolled oats, protein powder, cinnamon, nutmeg, ginger, and salt.
  3. Stir in grated carrots, almond butter, honey (or maple syrup), and vanilla extract until fully mixed.
  4. If needed, gradually add almond milk to achieve a sticky but cohesive texture.
  5. Fold in optional add-ins like chopped walnuts or raisins.
  6. Press the mixture firmly into the prepared pan to create an even layer.
  7. Optionally drizzle melted white chocolate or coconut butter on top.
