  • 2 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 2 large eggs
  • 1 package pre-made mini pie crusts
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with mini pie crusts.
  2. Boil cubed sweet potatoes in water for 12–15 minutes until tender. Drain and mash until smooth.
  3. In a mixing bowl, combine mashed sweet potatoes, brown sugar, heavy cream, vanilla extract, cinnamon, nutmeg, ginger, salt, and beaten eggs; mix until smooth.
  4. Fill each mini crust about 3/4 full with the sweet potato mixture.
  5. Bake for 18–20 minutes until the filling is set. Let cool for 10 minutes before serving.
