2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 large red bell pepper, cut into 1-inch pieces
1 large yellow bell pepper, cut into 1-inch pieces
1 large red onion, cut into 1-inch pieces
1 pint cherry tomatoes
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup ketchup
1/2 cup apple cider vinegar
1/4 cup brown sugar, packed
2 tablespoons chili powder
1 tablespoon smoked paprika
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (or more, to taste)
1/4 teaspoon ground cinnamon
1/4 cup water
Chopped cilantro for serving
Lime wedges for serving
Crumbled cotija cheese for serving
Instructions
Cut the chicken into 1-inch cubes and chop the bell peppers and onion into similar-sized pieces. Wash the cherry tomatoes.
In a mixing bowl, combine olive oil, salt, black pepper, ketchup, apple cider vinegar, brown sugar, chili powder, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, ground cinnamon, and water. Mix well.
Add the cubed chicken to the marinade and stir until coated. Cover and refrigerate for at least 30 minutes (or overnight).
Thread marinated chicken onto skewers alternately with bell peppers and onions.
Preheat your grill or oven to medium-high heat. Grill skewers for about 5–7 minutes per side or bake at 400°F for about 25 minutes until fully cooked.
