  • 1 cup milk or buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup hot water
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and instant coffee (if using).
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients; whisk until smooth.
  4. Gradually mix in hot water until you achieve a thin batter.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cakes cool completely on a wire rack before frosting.
  7. For frosting, beat softened butter until light; gradually add powdered sugar and cocoa powder. Mix in vanilla extract and heavy cream until smooth.
  8. Frost between layers generously and cover the entire cake with remaining frosting.
