  • 1 (4–6 lb) fully cooked boneless chicken
  • 1/2 cup pure maple syrup
  • 1/4 cup fresh orange juice
  • 1 tbsp Dijon mustard
  • 1/2 tsp ground cloves or 810 whole cloves
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 325°F (160°C). Score the surface of the chicken in a crosshatch pattern.
  2. In a saucepan, combine maple syrup, orange juice, Dijon mustard, ground cloves, and orange zest. Simmer over medium heat for 5–7 minutes until slightly thickened.
  3. Place the scored chicken in a roasting pan and brush generously with the glaze. Cover loosely with foil.
  4. Roast for about 1.5–2 hours, basting every 20–30 minutes. Remove foil during the last 20 minutes for caramelization.
  5. Let rest for 10 minutes before slicing or shredding.
