  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar (for raspberry swirl)
  • 1 tbsp lemon juice (for raspberry swirl)

Instructions

  1. Prepare the raspberry swirl: In a saucepan, combine raspberries, sugar, and lemon juice. Simmer for 5-7 minutes until thickened; strain and set aside.
  2. Preheat your oven to 325°F (163°C).
  3. Make the crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into a springform pan and bake for 8-10 minutes until golden. Cool completely.
  4. Prepare the filling: Beat cream cheese until smooth, then add sugar, sour cream, lemon zest, lemon juice, and vanilla extract. Mix in eggs one at a time on low speed.
  5. Assemble: Pour filling over cooled crust and drop spoonfuls of the raspberry sauce on top; gently swirl with a knife.
  6. Bake: Cook for 55-65 minutes until set but slightly jiggly in the center. Turn off oven and let cool inside for an hour before removing.
