  • 1 cup Almond Flour
  • 2 tbsp Coconut Flour
  • 1 tbsp Erythritol
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 pinch Salt
  • 2 tbsp Ground Cinnamon
  • 1 tbsp Optional Sweetener for Dusting (powdered erythritol)
  • 2 tbsp Butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese, almond flour, coconut flour, erythritol, eggs, vanilla extract, baking powder, and salt. Blend with an electric mixer until smooth.
  3. Roll the dough out on parchment paper to about ¼ inch thick.
  4. Mix ground cinnamon with optional sweetener and sprinkle over the dough.
  5. Roll tightly into a log using the parchment paper for support.
  6. Slice into 1-inch pieces and place on a greased baking sheet.
