  • 1 cup (240ml) whole milk, warmed to about 110°F (43°C)
  • 2 and 1/4 teaspoons (7g) instant or active dry yeast
  • 3 Tablespoons (38g) granulated sugar
  • 3 Tablespoons (43g) unsalted butter, softened to room temperature
  • 3 cups (375g) all-purpose flour, spooned & leveled, plus more as needed
  • 1 and 1/4 teaspoons salt
  • 1 cup (16 Tbsp; 226g) salted butter, slightly softened
  • 1 Tablespoon all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 Tablespoon ground cinnamon
  • 6 Tablespoons Nutella or jam or lemon curd or pastry cream

Instructions

  1. In a stand mixer bowl, combine warm milk, yeast, and sugar; let sit until foamy (about 5 minutes).
  2. Mix in softened butter, 2 cups flour, and salt; beat for 2 minutes.
  3. Gradually add remaining flour until soft dough forms.
  4. Knead for 5 minutes until smooth; let rise in a greased bowl covered for 2 hours.
  5. Punch down dough and chill for 20 minutes after rolling into a rectangle.
  6. Prepare the butter layer by mixing softened butter with flour.
  7. Roll out chilled dough again; spread butter in the center and fold.
  8. Shape into cruffins using a muffin pan and bake according to previous instructions.
