  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil, then sauté chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey and cook until browned (5-6 minutes), breaking it apart with a spoon. Stir in diced tomatoes, Italian herbs, salt, and black pepper; simmer for 3-4 minutes.
  4. Layer half of the sliced zucchini in the baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers with remaining ingredients.
  5. Bake uncovered for 30-35 minutes or until bubbly and cheese is golden brown. Cool for 5 minutes before serving.
