  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 bunch Parsley
  • 1 bunch Cilantro
  • 1 bunch Mint
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1 medium Red Bell Pepper
  • 2 tablespoons Lemon Juice
  • 1 clove Garlic
  • 1 tablespoon Honey or Maple Syrup
  • to taste Salt
  • to taste Pepper

Instructions

  1. Rinse 1 cup of quinoa under cold water. In a pot, combine quinoa with 2 cups of vegetable broth and bring to a boil. Lower the heat, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop parsley, cilantro, mint, cherry tomatoes, cucumber, and red bell pepper.
  3. In a small bowl, whisk together 2 tablespoons lemon juice, minced garlic, honey or maple syrup, salt, and pepper.
  4. Fluff the cooked quinoa with a fork in serving bowls. Top with chopped vegetables and drizzle dressing over everything.
