  • 2 cups cooked and shredded chicken
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 can (10 oz) red enchilada sauce
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic in oil until softened.
  3. Add the shredded chicken along with cumin, chili powder, salt, and pepper; mix well and cook for an additional few minutes.
  4. Pour a little enchilada sauce into a baking dish to prevent sticking.
  5. Fill each tortilla with the chicken mixture and cheese, roll tightly, and place seam side down in the dish.
