  • 1 pound twisted pasta (rotini or fusilli)
  • 2 boneless, skinless chicken breasts, cubed
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives

Instructions

  1. Cook pasta according to package directions until al dente; drain and set aside.
  2. In a bowl, mix chicken cubes with olive oil, Cajun seasoning, and paprika.
  3. Sauté chicken in a skillet over medium-high heat for about 6-8 minutes until browned; remove from skillet.
  4. In the same skillet, melt butter and add garlic; cook for 1 minute.
  5. Whisk in flour to create a roux; cook for another couple of minutes.
  6. Gradually whisk in milk and cream; bring to a simmer while stirring occasionally.
  7. Allow the sauce to thicken for 5-7 minutes on low heat before incorporating mozzarella and Parmesan cheeses.
  8. Mix in cooked pasta and sautéed chicken; toss until coated.
  9. Transfer to a serving dish and top with remaining mozzarella cheese.
  10. Broil for 2-3 minutes until cheese is melted and bubbly; garnish with chopped chives if desired.
