  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup small pasta (like ditalini)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches until lightly seared. Remove and set aside.
  3. In the same pot, sauté diced onions, carrots, celery, and minced garlic until softened.
  4. Pour in chicken broth and bring to a simmer. Add small pasta and return meatballs to the pot. Simmer until the pasta is tender.
  5. Stir in heavy cream and fresh spinach; simmer until spinach wilts slightly. Season with salt and pepper before serving.
