  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 tablespoon Califia unsweetened almond milk
  • 4 slices of pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 23 cups fresh mixed greens
  • 3/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced shallots
  • 1/4 cup loosely packed fresh parsley
  • pinch of salt
  • 1/2 cup pepitas
  • 1 tablespoon olive oil

Instructions

  1. For the dressing, combine orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar. Blend with an immersion blender until smooth.
  2. Preheat the grill to medium-high heat. Brush pineapple slices with olive oil and grill for 2 minutes on each side. Grill corn until slightly charred (about 5 minutes per side).
  3. In salad bowls, layer mixed greens topped with grilled pineapple slices, corn kernels cut from the cob, avocado slices, pepitas, and blueberries.
  4. Drizzle with Creamy Citrus Dressing before serving.
