Coconut-Infused Beef Curry with Fries and Rice is a delightful culinary experience that combines tender, succulent beef simmered in a creamy coconut sauce with perfectly crispy fries and fluffy rice.

  • 2 lbs beef cubes (chuck or stew meat), trimmed
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Coconut milk or broth (enough to cover the meat partially)
  • Fries (baked or fried)
  • Rice (cooked according to package instructions)

Instructions

  1. Season the beef cubes with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear the beef in batches until browned on all sides. Remove from pot and set aside.
  2. In the same pot, sauté chopped onion for about 5 minutes until softened. Add minced garlic and grated ginger; cook for another minute until fragrant.
  3. Stir in curry powder, cumin, and coriander; toast spices for about a minute.
  4. Return seared beef to pot and add enough broth or coconut milk to cover partially. Simmer on low heat for about 45 minutes until beef is tender.
  5. While the curry simmers, prepare fries according to your method and cook rice as per instructions until fluffy.
  6. Serve hot with curry over rice alongside crispy fries.
