  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • Juice of 1 lime

Instructions

  1. In a Dutch oven, heat vegetable oil over medium heat. Sauté onion until translucent, then add garlic and ginger; cook until fragrant.
  2. Increase heat to medium-high and brown beef cubes on all sides. Remove and set aside.
  3. Add red curry paste and other spices to the pot, stirring for about 2 minutes until aromatic.
  4. Return beef to the pot; pour in coconut milk and broth along with lime juice. Stir gently to combine.
  5. Cover and simmer on low for about 3 hours or until beef is tender.
