  • 3 medium beets (peeled and grated)
  • 8 cups chicken broth
  • 3 medium Yukon potatoes (peeled and sliced)
  • 2 carrots (peeled and sliced)
  • 2 celery ribs (chopped)
  • 1 medium onion (chopped)
  • 4 Tbsp olive oil
  • 4 Tbsp ketchup or 3 Tbsp tomato sauce
  • 2 bay leaves
  • 1 can white cannellini beans
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Prepare all vegetables by peeling, grating, and slicing them. Keep sliced potatoes in cold water until ready to use.
  2. In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Add grated beets and sauté for about 10 minutes until softened.
  3. Pour in chicken broth and water; add sliced potatoes and carrots. Cook for about 10–15 minutes until tender.
  4. In a skillet, heat remaining oil over medium-high heat; sauté onion, celery, and optional bell pepper until golden.
  5. Stir in ketchup or tomato sauce; cook briefly before adding to the soup pot.
  6. Add beans, bay leaves, vinegar, salt, pepper, garlic, and dill; simmer for an additional 2–3 minutes. Adjust seasoning if necessary.
