  • 3/4 cup sour cream
  • 1 and 1/2 teaspoons vanilla extract
  • 3 large eggs
  • 3/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 5 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 350°F (177°C) and adjust the oven rack to the lower-middle position.
  2. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter in a bowl. Press into an ungreased springform pan and pre-bake for 10 minutes.
  3. In a mixer, beat cream cheese with granulated sugar until smooth. Add sour cream and vanilla; mix well. Incorporate eggs one at a time until just blended.
  4. For the cinnamon swirl mixture, combine brown sugar, flour, and cinnamon in a bowl. Add melted butter and mix until crumbly.
  5. Layer one-third of the cheesecake batter into the crust, sprinkle with half of the cinnamon swirl mixture, repeat layering with remaining ingredients, finishing with batter on top.
  6. Bake in a water bath for approximately 65–85 minutes until edges are set but center wobbles slightly.
  7. Allow cooling gradually in the oven before refrigerating for at least four hours or overnight.
  8. Serve topped with whipped cream and a dusting of cinnamon if desired.
