  • 1 can (8 ounces) refrigerated cinnamon roll dough
  • 1 tablespoon melted butter
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup brown sugar for swirl
  • 1 tablespoon ground cinnamon for swirl
  • 2 tablespoons melted butter for swirl
  • Icing from the cinnamon roll can or 1/2 cup powdered sugar mixed with 1 tablespoon milk for glaze

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a 9-inch springform pan.
  2. Roll out the cinnamon roll dough and press it evenly into the bottom of the pan, brushing with melted butter.
  3. In a mixing bowl, beat cream cheese with sugars until smooth. Add eggs one at a time, then mix in vanilla extract, sour cream, heavy cream, and ground cinnamon.
  4. Create the cinnamon swirl by mixing brown sugar with ground cinnamon and melted butter until thick.
  5. Pour half of the cheesecake batter over the crust; drizzle with half of the swirl mixture and gently swirl together. Repeat with remaining batter and swirl.
  6. Bake for 55–65 minutes until slightly jiggly in the center. Cool gradually in the oven before chilling in the fridge for at least four hours or overnight.
  7. Before serving, drizzle with icing or a simple glaze made from powdered sugar mixed with milk.
