Chickpea Salad Melts are a delightful and hearty vegetarian sandwich option that brings together the creamy goodness of mashed chickpeas, the crunch of fresh vegetables, and the melty texture of your favorite cheese. Perfect for any meal—be it lunch, dinner, or a quick snack—these melts are easy to prepare and full of flavor.

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1/2 cup diced celery
  • 1/2 cup diced pickles
  • 1/3 cup diced red onion
  • 2 teaspoons Dijon mustard
  • 1/4 cup mayonnaise (vegan or regular)
  • 8 slices whole wheat sandwich bread
  • 8 slices sharp cheddar cheese (or preferred cheese)

Instructions

  1. In a mixing bowl, mash the rinsed and drained chickpeas with a fork, leaving some whole for texture.
  2. Stir in diced celery, pickles, red onion, Dijon mustard, mayonnaise, salt, and pepper until well combined.
  3. Heat a large pan over medium-low heat. Butter one side of each bread slice.
  4. Assemble sandwiches by placing cheese and a generous amount of chickpea salad on the unbuttered sides of half the bread slices before topping with the remaining slices (butter-side up).
  5. Cook sandwiches in the heated pan for about 3-5 minutes per side until golden brown and cheese is melted.
