  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded mozzarella cheese (for melting over chicken)
  • ½ cup shredded mozzarella cheese (for sauce)
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Chopped parsley or dried herbs, for garnish

Instructions

  1. Cook rotini according to package instructions until al dente; reserve pasta water and drain.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper.
  3. Heat olive oil and butter in a skillet. Sear chicken until golden brown.
  4. Add garlic and half the mozzarella until melted; keep warm.
  5. In the same pan, sauté remaining garlic, then add heavy cream and broth; bring to simmer.
  6. Stir in cheeses until melted; season with Italian seasoning.
  7. Combine pasta with sauce; serve with cheesy chicken on the side.
