  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • ½ cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese (cut into chunks)
  • 8 ounces shredded provolone cheese
  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and position the oven rack in the middle.
  2. In a baking dish, combine whole cherry tomatoes with olive oil, pesto, minced garlic, salt, and pepper. Toss to coat and bake for 15 minutes until soft.
  3. While the tomatoes roast, mix sour cream and chopped basil in a bowl. Add mozzarella chunks, provolone cheese, and grated parmesan; stir until combined.
  4. Once the tomatoes are done roasting, gently fold in the cheese mixture and top with halved cherry tomatoes.
  5. Bake for an additional 20 minutes or until bubbly and golden brown. Garnish with fresh basil before serving.
