Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 ripe bananas, mashed
  • Butter or oil, for cooking
  • Optional toppings: sliced bananas, maple syrup, chopped walnuts

Instructions

  1. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and optional cinnamon.
  2. In another bowl, mix the buttermilk, egg, melted butter, and mashed bananas until well blended.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined; some lumps are fine.
  4. Preheat a nonstick skillet over medium heat and lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2–3 minutes), then flip and cook until golden brown (about another 2 minutes).
  6. Serve warm with optional toppings.
