  • ½ cup all-purpose flour
  • 1 large onion, finely chopped
  • 1 green bell pepper, chopped
  • 3 ribs celery, chopped
  • 4 cloves garlic, minced
  • 1 lb chicken thighs (boneless, skinless), cut into bite-sized pieces
  • 6 cups low-sodium chicken stock
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • ½ tsp cayenne pepper
  • Salt and black pepper, to taste
  • 2 cups okra, sliced (optional)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • 4 green onions, sliced
  • White rice, cooked
  • Hot sauce (like Tabasco)

Instructions

  1. In a heavy-bottomed pot or Dutch oven, heat the oil over medium heat. Whisk in the flour and cook until the roux turns deep chocolate brown (20–30 minutes).
  2. Add onion, bell pepper, and celery to the roux; cook for about 5 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Brown the chicken in a separate skillet until golden; transfer to the pot.
  4. Slowly stir in chicken stock and add spices. Bring to boil then reduce heat to simmer uncovered for 45–60 minutes.
  5. If using okra, stir it in during the last 20 minutes of cooking. Adjust seasonings before serving.
