  • 1 ½ cups all-purpose flour
  • 1 cup chopped apples (preferably Granny Smith)
  • 6 tablespoons unsalted butter (room temperature)
  • 3 ½ tablespoons unsalted butter (for streusel topping)
  • 1 egg
  • ¾ cup brown sugar (light or dark)
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger (pumpkin pie spice or allspice)
  • 1 teaspoon vanilla extract
  • ¼ cup Greek yogurt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
  2. In a small saucepan, boil 1 ¼ cups apple cider until reduced to about half a cup; set aside to cool.
  3. Combine melted butter, flour, brown sugar, granulated sugar, and cinnamon in a bowl to create the streusel topping.
  4. In another bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  5. Cream room-temperature butter with brown and granulated sugars until light and fluffy; add egg and vanilla extract.
  6. Mix in Greek yogurt and cooled apple cider until well blended.
  7. Gradually fold dry ingredients into the wet mixture; gently mix in chopped apples.
  8. Pour half the batter into the prepared dish, sprinkle half of the streusel on top, then layer remaining batter followed by the rest of the streusel.
  9. Bake for approximately 40 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool before glazing with a mixture of powdered sugar, reduced apple cider, and vanilla.
