  • 3 lbs bone-in beef short ribs
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 4 cloves garlic, smashed
  • 3 cups spiced apple cider
  • 1 cup beef stock
  • 4 large sweet potatoes, peeled & cubed
  • 4 tbsp butter
  • 2 tsp fresh rosemary, minced

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper. Sear until browned on all sides; set aside.
  3. In the same pot, sauté onion, carrots, and garlic until fragrant.
  4. Deglaze with spiced apple cider and add beef stock along with spices and short ribs.
  5. Cover and braise in the oven for 2.5 to 3 hours until tender.
  6. Boil sweet potatoes in a separate pot until soft; mash with butter, rosemary, and salt.
  7. Serve short ribs over mashed sweet potatoes drizzled with sauce.
